Peanut Sesame Chicken with Mushrooms
Fixings
* 2 cups water
* 1 cup uncooked glutinous white rice (sushi rice)
* 2 tablespoons vegetable oil
* 2 teaspoons sesame oil
* 5 green onions, cleaved
* 3 cloves garlic, minced
* 3 skinless, boneless chicken bosom parts - cubed
* 8 ounces new mushrooms, cleaved
* 1 tablespoon rice vinegar
* 3 tablespoons soy sauce
* 2 tablespoons toasted sesame seeds
* 1 tablespoon cornstarch
* 2 tablespoons cold water
* 3/4 cup cleaved unsalted dry-cooked peanuts
Directions
1. In a medium pot, heat the 2 cups water and rice to the point of boiling. Cover, diminish hotness to low, and stew 20 minutes.
2. Heat the vegetable oil and sesame oil in a huge skillet over medium-high hotness, and saute the green onions and garlic until delicate. Blend in the chicken and mushrooms, and proceed to cook and mix around 5 minutes. Blend in the rice vinegar, soy sauce, and sesame seeds. Decrease hotness to medium-low, and stew 20 minutes, blending incidentally.
3. In a bowl, blend the cornstarch and 2 tablespoons cold water. Mix the cornstarch combination and peanuts into the skillet and cook for a couple of moments over high hotness to thicken. Serve over the cooked rice...and appreciate it !
